Wreck the Halls All Grain Recipe Kit

A rich, warming festive ale with caramel, orange and a gentle touch of Christmas spice.

Wreck the Halls is made for dark evenings, roaring fires and a good pint with friends. At around 6.2% ABV, it's a proper winter warmer without being overly heavy.

A generous Maris Otter base provides the malt backbone, with Caramunich, Crystal, Carared and Carafa adding layers of caramel, toffee, toasted malt and a deep ruby-brown colour. Challenger and Bobek hops bring a traditional earthy and herbal character, balancing the richer malt.

Cinnamon and star anise add gentle festive spice, while fresh orange peel brings a bright citrus note that lifts the beer. The spices are there to complement the ale rather than take it over.

Fresh Orange Peel

Fresh orange peel is not included in the kit, so you'll need to supply this yourself.

For the recipe, use the peel of 1–2 fresh oranges, taking care to remove as much of the white pith as possible. The pith can add unwanted bitterness.

Add the orange peel during the last 5 minutes of the boil. This gives the beer a fresh citrus character.
