Our 2025 Simcoe has arrived and this is smelling absolutely divine. It's always a pleasure opening a bag of Simcoe as all those tropical flavours come dancing out of the bag every time it's opened.

Developed as YCR 14 by Yakima Chief Ranches and released by the Select Botanicals Group in 2000, Simcoe has become one of the classic American hop varieties. It can be used for bittering, but is particularly effective when used for flavour and aroma additions.

Simcoe has a distinctive combination of deep pine, resin, passion fruit and tropical fruit, making it a wonderfully versatile hop for modern American-style beers.

Simcoe Hop Flavour & Aroma

Simcoe is best known for its characteristic pine and resinous notes, balanced by bright tropical fruit and passion fruit.

Depending on how you use it, you can expect:

Brewing with Simcoe T90 Hops

Simcoe is an incredibly versatile brewing hop. While it can certainly be used as a bittering hop, its distinctive flavour and aroma make it particularly valuable in late kettle additions, whirlpool additions and dry hopping.

It's a fantastic choice for American Pale Ale, IPA, Hazy Pale Ale, NEIPA and Double IPA, and works equally well on its own or as part of a modern hop blend.

Try pairing Simcoe with other popular US varieties such as Citra, Mosaic, Amarillo or Centennial to build layers of citrus, tropical fruit and resinous hop character.

Whirlpool & Hop Stand

Adding Simcoe to the whirlpool or as a hop stand is a great way to extract plenty of flavour and aroma without relying solely on a large bittering addition.

Whirlpool Simcoe can bring out its tropical fruit and passion fruit character while retaining some of that unmistakable pine and resin character.

It's particularly useful when brewing hop-forward Pale Ales and IPAs where you want plenty of flavour without excessive bitterness.

Dry Hopping with Simcoe

Simcoe is an excellent dry hop for IPA, Hazy Pale Ale and NEIPA.

Dry hopping after fermentation allows the aromatic side of Simcoe to really come through, producing an intense combination of passion fruit, tropical fruit, pine and citrus.

For a modern hop-forward beer, Simcoe can be used on its own or combined with varieties such as Citra and Mosaic. These combinations can produce a big tropical fruit character while Simcoe adds depth and that classic resinous American hop character.

Late Kettle Additions

Simcoe can be used towards the end of the boil to add flavour and aroma while contributing some bitterness.

Late additions at 5–15 minutes can provide a combination of pine, citrus and tropical fruit, while moving some of your Simcoe addition into the whirlpool can help preserve even more of its delicate aroma.

What Beer Styles Can You Brew with Simcoe Hops?

Simcoe is a versatile hop that works particularly well in American and modern hop-forward beer styles.

It's an excellent choice for:

Simcoe is also a great variety to experiment with in your own recipes. Use it on its own to explore its distinctive pine and passion fruit character, or combine it with other American hops for a more complex hop profile.

Simcoe Hops & Kveik Yeast

Simcoe is also a great match for Kveik Yeastery Ebbegarden and Eitrheim if you're looking to brew a fast-fermenting, hop-forward beer.

Ebbegarden works particularly well when you want Simcoe's tropical fruit and passion fruit character to shine, while Eitrheim can make an interesting pairing if you're looking for a slightly softer mouth feel and expression of the hop. We have found both pair well with hop forward beers and we found the multi strain aspect enhances the flavours in the beers we've brewed with both these yeasts.

Both yeasts can be used to create distinctive hop-forward beers, so don't be afraid to experiment. Try Simcoe in a Pale Ale or IPA alongside Kveik yeast and see how the fermentation character interacts with the pine, tropical fruit and citrus notes from the hops.

Simcoe + Kveik is definitely a combination worth trying.
