Mosaic is one of those hops that has earned a serious following among brewers, and for good reason. These Mosaic T90 hop pellets pack plenty of character, bringing a combination of juicy tropical fruit, citrus, blueberry, floral and earthy notes to your beer.
If you like hops with plenty going on, Mosaic is hard to ignore. It can bring big fruit-forward flavours to an American Pale Ale or IPA, while its more earthy and dank character adds another layer of complexity when used alongside other modern US hop varieties.
Mosaic Hop Flavour & Aroma
Mosaic is known for its distinctive and complex flavour profile. Depending on how and when you use it, you can expect notes of:

Dry Hopping with Mosaic
Mosaic is a particularly popular dry hop for IPA, American Pale Ale and New England IPA.
Dry hopping after fermentation allows the aromatic side of Mosaic to really shine, producing intense tropical fruit, citrus, mango and berry aromas without adding significant bitterness.
For a big hop-forward beer, Mosaic can be used on its own or combined with other modern American hops such as Citra or Simcoe.
Late Kettle Additions
Adding Mosaic towards the end of the boil gives you more flavour and aroma than using it purely as a bittering hop.
A late addition at 5–15 minutes can contribute citrus, tropical fruit and floral characteristics while still providing some bitterness.
For maximum aroma, consider moving some of your Mosaic addition into the whirlpool or using it as a dry hop.

Mosaic, along with Citra, has become one of my most-used hops in my home brewing. I have tried a wide variety of different hops, predominantly American and New World as they seem to my palate to be the most intense. But generally, I return those I find the most reliable, and it is the reliability of the flavour of Mosaic that leads me to continue to use it. I get distinctly orange 'marmaladey' aromas, often with a hint of dank marijuana, and flavours of orange and/or lemon. What's not to like?
