Norwegian Kveik that's happy brewing almost anything

Kveik Yeastery Stalljen K-22 is a genuine Norwegian multi-strain kveik from Stig Seljeset in Hornindal, Norway.

If Eitrheim is the malt-friendly member of the Kveik Yeastery family and Ebbegarden is the hop companion, Stalljen is the all-rounder.

It's a remarkably flexible yeast that can take you from a clean, crisp pseudo-lager or summer blonde through to Pale Ale, IPA and NEIPA, while still bringing some of its own character to the beer.

Multi-strain – closer to traditional kveik

One of the things that makes Kveik Yeastery interesting is that these aren't simply single-strain yeasts.

Traditional Norwegian farmhouse kveik was often a living community of several yeast strains, preserved and passed down through generations. Many modern commercial kveik products are based around a single isolated strain.

Kveik Yeastery's Stalljen contains six strains, helping retain some of the complexity and character of the original farmhouse cultures.

It's one of the reasons we think these yeasts are particularly interesting for homebrewers. You're not just buying another generic kveik – you're getting a little piece of Norwegian brewing heritage in the sachet.

What does Stalljen taste like?

Stalljen brings mango, pineapple, orange and lemon character, with the fruit becoming more pronounced at warmer fermentation temperatures.

Ferment it cooler for a cleaner, more restrained beer.

With a working range of around 12–38°C, it's remarkably versatile.

Great for a Norwegian Blonde

We've been using Stalljen ourselves in our Grain Over Sands Norwegian Blonde, pairing it with New Zealand hops to create a bright, modern summer beer.

It's a good example of what Stalljen can do: ferment it relatively cool and let the hops and malt lead, or push the temperature up and let the Norwegian kveik character become part of the beer.

From a Norwegian farm to your fermenter

Stalljen comes from Stig Seljeset in Hornindal, Norway. The name means stable and comes from the old horse stable at the Seljeset farm.

The culture has its roots in the traditional Norwegian farmhouse brewing heritage that Kveik Yeastery continues to preserve.
