Norwegian Kveik with plenty of character

Kveik Yeastery Eitrheim is a genuine Norwegian multi-strain kveik yeast from Reidar Eitrheim in Bleie, Norway, in the Hardangerfjord region. Passed down through generations of Norwegian farmhouse brewing, Eitrheim brings together four yeast strains to give the finished beer a layered fermentation character.

We're pleased to stock the Kveik Yeastery range here at Grain Over Sands, giving UK homebrewers access to these distinctive Norwegian kveik cultures.

Eitrheim is particularly interesting if you want a kveik that works with the malt character of the beer rather than simply overpowering it. Kveik Yeastery describe it as their malt-friendly culture, making it a great choice for richer, malt-forward beers as well as modern pale ales and IPAs.

What does Eitrheim taste like?

Expect a lovely combination of:

  • Apricot and peach as the main flavours
  • Orange and pineapple adding extra fruity character
  • Medium flavour intensity when fermented warm
  • A more restrained, neutral character when fermented cooler

That makes Eitrheim a particularly versatile kveik. Try it in a pale ale or IPA when you want some fruity fermentation character, or use it in an amber, porter or stout where the softer fruit notes can sit alongside the malt.

Fermentation temperature

Eitrheim has an impressive working range of approximately 15–38°C.

For the biggest expression from the yeast, Kveik Yeastery recommend around 31–35°C, where fermentation can be completed in around 72 hours under suitable conditions. Fermentation will take longer at lower temperatures.

For high-gravity beers, Kveik Yeastery recommend pitching two packs and using yeast nutrient to support a healthy fermentation.
