Kveik Yeastery Ebbegarden is a genuine Norwegian multi-strain kveik from Ebbegarden farm in Stordal, Norway.
If Eitrheim is the malt-friendly member of the Kveik Yeastery family, Ebbegarden is the hop companion. It's a great choice when you want your hops to take centre stage while the yeast adds its own layer of fruity character underneath.
Ebbegarden contains four naturally occurring yeast strains and is particularly well suited to IPA, NEIPA, Pale Ale and other hop-forward beers.Kveik Yeastery describes it as a high-attenuating culture with strong biotransformation potential.
What does Ebbegarden taste like?
The main character is:
- Apple and pear
- Tropical fruit
- Citrus
At warmer fermentation temperatures the flavour becomes more expressive, while cooler fermentation produces a more restrained and neutral profile.
That makes Ebbegarden particularly interesting with modern hop varieties. The yeast contributes fruit and fermentation character without turning the beer into a yeast-dominated fruit bomb.
A Kveik made for hops
If you're brewing a juicy IPA or NEIPA, Ebbegarden is well worth trying.
Its high attenuation helps produce a drier, more drinkable finish, while its fruity character can work alongside modern hops rather than fighting them. Kveik Yeastery specifically recommends Ebbegarden for IPAs and hazy beers.
It's also worth experimenting with in Pale Ales where you want a little more fermentation character than you would normally get from a clean American ale yeast.
Fermentation temperature
Ebbegarden has a wide working range of approximately 15–38°C.
For maximum expression and rapid fermentation, Kveik Yeastery recommend around 31–35°C, where fermentation can be completed in around 72 hours under suitable conditions. As with other kveiks, fermentation will take longer at lower temperatures.
For high-gravity beers, Kveik Yeastery recommend pitching two packs and using yeast nutrient to support a healthy fermentation.
You can pitch directly into the wort by sprinkling the yeast across the surface, or rehydrate before pitching.
From a Norwegian farmhouse to your fermenter
Ebbegarden kveik comes from Ebbegarden farm in Stordal, Norway, where the farm traditionally produced fruit. The local farmhouse brewing tradition is thought to have contributed to the distinctive fruity character associated with this culture.
Kveik cultures like Ebbegarden are part of a long Norwegian farmhouse brewing tradition, where yeast was carefully preserved, shared and reused from one brew to the next.

I love all of the Kveik Yeastery varieties. They ferment so quickly at higher temperatures and work well with pressurised fermentation. A full batch fermented in under 72 hours means after cold crash and carbonation that there will be a very quaffable ale in just under 2 weeks from brewday. I’d highly recommend Grain Over Sands as a supplier. Great value ingredients and great customer service. They are the only UK stockist of Kveik Yeastery so will become one of my go to home brew suppliers.
