Originally developed by Jackson Hop Farm in Idaho, Idaho 7 has become a popular choice with brewers looking for a hop that can deliver both tropical fruit and classic American citrus, with a noticeable resinous edge.
Idaho 7 is particularly well suited to IPA, Pale Ale, NEIPA, Hazy IPA, Double IPA and other modern hop-forward beers.

Idaho 7 Hop Flavour & Aroma
Idaho 7 has a broad flavour profile that sits somewhere between modern tropical fruit and classic American citrus and pine.
Depending on how you use it, you can expect a combination of:

- Orange and citrus
- Stone fruit
- Resinous and pine notes
- Herbal character
The combination of tropical fruit and resin is what gives Idaho 7 its character. It can be bright and juicy when used late in the brewing process, while heavier additions can bring out more of its dank, resinous side.
That versatility makes Idaho 7 useful for everything from a relatively restrained Pale Ale through to a seriously hop-heavy IPA.
How to Use Idaho 7 T90 Hop Pellets
Idaho 7 T90 pellets can be used for bittering, flavour and aroma, although its strongest qualities are usually found in later additions.
Bittering
Idaho 7 can be used for bittering, but it's often better to think of it as a flavour and aroma hop.
Using a high-alpha bittering variety such as Magnum for the main bitterness allows you to save Idaho 7 for the parts of the recipe where its pineapple, citrus and resinous character can really make an impact.
Late Kettle Additions
Late additions of Idaho 7 can bring plenty of pineapple, mango, grapefruit and citrus character alongside some bitterness.
Adding Idaho 7 during the final 5–15 minutes of the boil is a good way of increasing hop flavour without relying entirely on dry hopping.
For an American Pale Ale, a late Idaho 7 addition can give the beer a noticeable tropical and citrus character without requiring an enormous hop bill.
Whirlpool / Hop Stand
The whirlpool is an excellent place to use Idaho 7.
Adding Idaho 7 to the whirlpool or hop stand can produce a combination of pineapple, mango, orange and grapefruit, while allowing you to keep the bitterness contribution relatively controlled.
A generous whirlpool addition works particularly well in Pale Ales, IPAs and NEIPAs, where the tropical and citrus character can take centre stage.
Dry Hopping
Idaho 7 is an excellent dry-hopping hop for modern Pale Ales and IPAs.
Dry hopping can bring out its pineapple, mango, grapefruit and citrus character, while heavier dry-hop rates can reveal more of its resinous and pine-like side.
Try Idaho 7 on its own for a single-hop IPA or Pale Ale, or combine it with other varieties to build a more complex hop profile.
Idaho 7 works particularly well alongside Citra, Mosaic, Simcoe, Centennial and Chinook, where its tropical and resinous character can add another dimension to the blend.
