Hersbrucker is a classic German aroma hop originating from the Hersbruck region of southern Germany and now grown principally in the famous Hallertau and Spalt hop-growing regions.

Known for its gentle and refined character, Hersbrucker brings floral, herbal and earthy notes with a subtle spicy and woody edge. Its relatively low alpha acid level makes it particularly well suited to beers where hop character should complement rather than dominate the malt.

Brewing with Hersbrucker

Hersbrucker is particularly at home in traditional German and European beer styles. Its soft hop character works beautifully in Munich Helles, German Pilsner, Kölsch, wheat beer and other pale lagers, where a more assertive modern hop could easily overpower the beer.

It can be used throughout the boil, but Hersbrucker really earns its place as a later addition where its delicate floral, herbal and spicy character can come through.

With an alpha acid of 3.6%, our 2025 crop is also a useful choice for brewers looking for the softer bitterness associated with traditional European brewing.
