Caledonian Porter Tribute All Grain Recipe Kit

A dark, characterful Edinburgh porter inspired by the beers of the historic Caledonian Brewery. Expect rich malt, biscuit and gentle roasted chocolate notes, balanced by earthy Fuggle and Goldings hops and a dry, satisfying finish.

This is a proper old-school British porter rather than a big, heavy stout — dark, flavourful and very drinkable.

About the Brewery

The Caledonian Brewery was founded on Slateford Road in Edinburgh in 1869 by George Lorimer and Robert Clark. The brewery became an important part of Edinburgh's brewing heritage and survived several changes of ownership, including a management buyout in 1987 that saved it from closure.

The brewery eventually became part of Scottish & Newcastle and later Heineken. Brewing at the historic site finally came to an end after more than 150 years of production.

The Beer

Our tribute recipe takes inspiration from Caledonian's traditional porter style, combining Maris Otter with wheat, amber, crystal and chocolate malts. Fuggle and Goldings provide the classic English hop character, leaving a dark, malty beer with a dry finish and around 35 IBUs.

The recipe is based on Graham Wheeler's Brew Your Own British Real Ales.

Choose Your Yeast

Safale S-04 – a classic choice for British ales, giving a nicely rounded malt character with subtle fruity esters.

WHC Fountainbridge – a Scottish-origin ale strain from a now-closed brewery. It offers a clean, characterful fermentation with subtle fruit and good attenuation, making it a particularly interesting choice for this Scottish-inspired porter.
