Azacca T90 hop pellets are a modern American hop variety known for their intense mango, pineapple, citrus and stone-fruit character.
Named after the Haitian god of agriculture, Azacca was bred in the USA and has become a popular choice for brewers looking for a big tropical hop profile with plenty of citrus and a subtle resinous edge.
Azacca is particularly well suited to IPA, Pale Ale, NEIPA, Hazy IPA, Double IPA and other modern hop-forward beers.

Azacca has a distinctly tropical character, with mango and pineapple at the front and citrus and stone fruit adding extra depth.

How to Use Azacca T90 Hop Pellets
Azacca T90 pellets can be used for bittering, flavour and aroma, although later additions are where this hop really comes into its own.
Bittering
Azacca can be used as a bittering hop, but its distinctive flavour is generally better saved for later in the recipe.
For a modern Pale Ale or IPA, consider using a clean high-alpha hop such as Magnum for the main bitterness, allowing Azacca to make its contribution through late kettle, whirlpool and dry-hop additions.
An early Azacca addition can still be useful when you want some of its character to become part of the background of the beer.
Late Kettle Additions
Late additions of Azacca can provide plenty of mango, pineapple, citrus and stone-fruit character alongside some bitterness.
Adding Azacca during the final 5–15 minutes of the boil is a good way to build hop flavour without relying entirely on dry hopping.
For an American Pale Ale, this can produce a noticeable tropical character while keeping the overall hop bill relatively straightforward.
Whirlpool / Hop Stand
Azacca works particularly well in the whirlpool.
Adding Azacca to the whirlpool or hop stand allows you to build mango, pineapple, citrus and orange character while keeping the bitterness contribution relatively controlled.
A generous whirlpool charge works particularly well in Pale Ales, IPAs and NEIPAs, where its tropical fruit character can remain prominent.
Dry Hopping
Azacca is an excellent dry-hopping hop, particularly when you want a strong tropical fruit aroma.
Dry hopping can bring out its mango, pineapple, citrus and stone-fruit character, with heavier hopping also revealing more of its resinous side.
Try Azacca on its own for a single-hop Pale Ale or IPA, or combine it with other varieties to build a more complex hop profile.
Azacca pairs particularly well with Citra, Mosaic, Simcoe, Centennial and Amarillo.
